Review: Wing Daddy’s Sauced Mozzarella
Bottom Line: Wing Daddy’s Sauced Mozzarella kicks up an already tasty appetizer with the sauce of your choice, and the Ghost Rush is a good option.
Wing Daddy’s is a regional wing chain located in Texas and Mexico that has been challenging some of the major franchises out there. They are a casual sit-down restaurant with a full bar and much more on their menu than just wings, including burgers, tacos, salads, ribs, etc. But when it comes to their wings, they do quite a good job—and they have some sauces that really pack in the heat (more on that here).
Just recently, they added to their appetizer selection by tossing their crisp, fried “melt-in-your-mouth” mozzarella with any of their wing sauces. I stopped by for lunch to try this out and went with their hottest sauce: Ghost Rush.
I got the order of three (splitting it with another person), and these are not wimpy little mozzarella sticks. I would call them planks—they’re quite sizeable and well-coated with breading. They fry them up just right so the crust delivers a good crunch, followed by melty cheese oozing into your mouth. And be careful, because they come out piping hot, and that cheese can definitely scald your tongue!
The Ghost Rush sauce starts off with an immediate sweetness, then hits you with a strong, peppery kick. It has hints of jerk seasoning, or maybe Korean gochujang, or perhaps even a mix of the two. Either way, it’s rich and flavorful and works really well with the mildness of the mozzarella. The cheese tempers the heat just a bit, but this still lands above Hot on my scale and is pushing toward Fiery. You’ll want something more than the dairy in the mozzarella handy to cool your mouth after eating one of these! They do come with a side of Ranch which helps with that, though I actually prefer them with just the sauce.
They don’t provide calorie information for the fried mozzarella (or any of their other menu items), but I can tell you this: it ain’t diet food! Nor are their wings—or pretty much anything else on the menu. (If you think you’re playing it safe with one of their salads, take a look at everything they pack into them!) So for me, a trip to Wing Daddy’s is a splurge, and I just plan for some extra time in the gym as penance.
The chain has locations throughout Texas, mostly in the central and eastern parts of the state, as well as locations in Mexico if you’re heading south of the border. They’re a growing franchise, and I compare them quite favorably to Buffalo Wild Wings. I don’t get to Wing Daddy’s as often as I’d like, but I’ve enjoyed my experience every time I’ve gone.
