Recipe: Quick and Easy Jalapeno Cheeseburger Quesadillas

This is a quick and easy recipe for Jalapeno Cheeseburger Quesadillas that is tasty and filling and can be made as a relatively healthy, low-carb dish.

Ingredients

4 Flour Tortillas (Low Carb is Okay, See Note Below)
3 Frozen, Pre-Cooked Slider Burger Patties (or One Regular Frozen Patty)
½ Cup Sweet Onions, Sliced
1 Fresh Jalapeño, Chopped
2 Slices Pepper Jack Cheese
2 Slices Cheddar Cheese
1 Tablespoon Oil

Directions

Heat up a skillet on medium heat and place the tortillas in to warm (you may have to do these two at a time). Cook for about thirty seconds to a minute on each side so that they get a little char and are more pliable. Stack the heated tortillas together and cover them so that they stay warm.

Heat the oil in the skillet and add the onions and Jalapenos. (If you want to kick these up hotter, add a diced Serrano as well.) Cook for about five minutes until the onions are softened. Add the frozen hamburger patties and cover. Cook for about another five minutes, until the patties are cooked through, then use a spatula to break them up. Stir the meat and veggies and cook for about two more minutes.

Take the warmed flour tortillas and place half of a slice of the Pepper Jack on one side and half of a slice of Cheddar on the other. Add one-quarter of the meat and veggies mixture, then fold the tortilla over. Repeat with the other tortillas.

Add all four of the quesadillas to the same pan you used for the meat and veggies. No additional oil should be needed, but you can add cooking spray if you want. Cover and cook for about four minutes. Remove the cover and press down on the quesadillas with a spatula to assure they stay together, then flip each one. Cook for about two more minutes until each side has the desired browning. Serve with salsa (here is a quick and easy recipe) and/or guacamole (this recipe is just right).

For the flour tortillas, low carb is fine. I like the Mission brand Carb Balance Whole Wheat tortillas and they claim that you can subtract the 10g of fiber from the 12g of cards to net out to only 2g of carbs. (I don’t track carbs close enough to know how valid all that is.) Regular tortillas will not turn these into calories bombs, but they will increase the cals and carbs.

If you are not excited about using pre-cooked, frozen hamburger patties, then next time you are cooking burgers on the grill do a couple of extra patties and stick them in the freezer for a quick and easy meal like this.  But I have found the store-bought ones to be pretty darn good, especially for something like this.
