Recipe: Trader Joe’s Peanut Satay Thai Noodles with Veggies

This quick and easy recipe uses the wonderful Trader Joe’s Peanut Satay Thai Noodles as a base and adds veggies along with a nice kick. (If you don’t have a Trader Joe’s near you, I have some optional ingredients mentioned below.)

Ingredients

1 Container Trader Joe’s Peanut Satay Thai Noodles

3 to 4 Dried Thai Chilis or Chili de Arbol

½ Cup Boiling Water

½ Teaspoon Sesame Oil

1 Tablespoon Vegetable Oil

1 Cup Broccoli Florets

⅓ Cup Red Pepper, Chopped

⅓ Cup Sweet Onion, Chopped

½ Tablespoon Soy Sauce

1 to 2 Tablespoons Sriracha Sauce

1 to 2 Tablespoons Cilantro, Minced

2 Lime Wedges

Directions

Put chilis in a bowl and pour the boiling water over them. Cover and let rest for several minutes.

Add sesame oil and vegetable oil to a wok or skillet on medium heat. Add veggies and cook for three to four minutes. Add chilis and stir.

Remove noodles from package and add with the veggies (I usually chop up the noodles before adding). Add the water that the chilis were in along with the soy sauce and cook until the liquid is gone.

Add the peanut sauce and Sriracha and stir well. Cook for two to three minutes until everything is combined. Divide into two portions and serve with cilantro and lime wedges as garnish as well as your choice of additional hot sauce (chili garlic sauce works very well).

The veggies that you use with this are up to you. Bok choy, carrots, mushrooms, spinach, and more can all work, depending on what you have in your fridge. If you want to add some chicken or shrimp or other protein, that works as well. And an egg roll is the perfect accompaniment, especially since this dish is not too high in calories (about 350 calories per serving).

The heat level depends on the chilis and the amount of hot sauce you add. Based on the ingredients I have above, this will come in above Medium on my scale, and the bites with the chili peppers will really have a bite. You can amp that up more if desired, or scale back on the chilis and/or hot sauce if you prefer a milder dish.

If you can’t find the Peanut Satay noodles at Trader Joe’s or don’t have a location near you then look for a Thai peanut sauce in the international section of your local market and boil up some thick spaghetti or fettucini for the noodles.
